Date and Nut Balls

About 1 c dates
½ - ¾ c nuts (almonds, brazils, cashews, macadamia all suitable)
2 T raw cacao powder
Slosh vanilla extract


Whizz all ingredients in a food processor until tacky and ground up. Add a slosh of water if the mixture’s not sticky enough. With wet hands, form balls and roll in coconut.  Keep in the fridge to keep firm or the freezer for a nougat texture.
You can add any dried fruit with the dates - adjust the recipe as you go and check the flavour to suit you. If you use dried apricot or plums (anything with a slight ‘kick’) add last to get the effect of the unique sprinkles of flavour).
